Preparation Method:
1. First, heat 2 tbsp ghee and 2 tbsp oil in a large kadai and fry the spices. Add cumin, bay leaf, star anise, javitri, teaspoon black pepper and cardamom pods)
2. Add onion, chillies, cloves of garlic, and ginger paste and saute until the onion turns golden brown.
3. Next, add mushrooms and saute until the mushrooms shrink slightly.
4. Also, add tomato and peas and fry well.
5. Now add mint and coriander and fry until aromatic.
6. Keep the flame low and turmeric, chilli, 1 ½ tbsp biryani masala and salt. Fry until the spices ring.
7. Then add curd and fry on low flame till the oil separates.
8. Once the oil separates, spread the masala evenly over the kadai.
9. Top with soaked basmati rice and spread evenly.
10. Next, top with fried onions, mint, coriander, kesar milk and ½ tbsp of biryani masala.
11. Pour 4 cups of hot water over the sides without disturbing the layers.
12. Pour in some ghee and lemon juice and bring the water to a boil.
13. Once the water comes to a boil, cover and cook for 20 minutes or until the rice is well cooked.
